For every two-ounce serving of hot dogs, bacon, sausage, or deli meats, the risk of diabetes rose 19 percent and the risk of heart disease increased 42 percent. There is a relatively small risk associated with eating up to one serving of processed meat per week. The greater risk may be associated with salt and other preservatives, rather than the fat content. Researchers will present these findings this week at an American Heart Association conference in San Francisco.
